chickpea chocolate chip blondies

Blondies that are packed with protein from chickpeas, nutty richness from almond butter and naturally sweetened with maple syrup! Whether you are looking for a wholesome snack or a dessert that is a bit more nutritious, these chickpea blondies are sure to hit the spot. Plus, they are gluten-free and easy to whip up in just one bowl – your food processor!

I love whipping these up at the beginning of the week to have on-hand!

Ingredients:

  • 1 can of chickpeas (drained and rinsed)
  • 1/3 cup almond butter (look for the jars with only almonds as the ingredient)
  • 1/2 cup oats
  • 1/2 cup maple syrup
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp flakey salt (more to top if desired)
  • 1/3 cup chocolate chips (I love these from Hu)

Details:

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8-inch glass pan with coconut oil or your preferred oil.
  3. In a food processor, combine all ingredients except for the chocolate chips. Blend until a smooth dough forms.
  4. Transfer the dough to a bowl and fold in the chocolate chips.
  5. Pour the dough into the greased pan, spreading it evenly.
  6. Sprinkle additional flaky salt on top if desired.
  7. Bake for 25-30 minutes, or until the top is golden brown.
  8. Let cool before slicing and serving.
