Whether you are looking for a wholesome snack or a dessert that is a bit more nutritious, these chickpea blondies are sure to hit the spot. Plus, they are gluten-free and easy to whip up in just one bowl – your food processor!

Ingredients:
- 1 can of chickpeas (drained and rinsed)
- 1/3 cup almond butter (look for the jars with only almonds as the ingredient)
- 1/2 cup oats
- 1/2 cup maple syrup
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp flakey salt (more to top if desired)
- 1/3 cup chocolate chips (I love these from Hu)
Details:
- Preheat your oven to 350°F (175°C).
- Grease an 8×8-inch glass pan with coconut oil or your preferred oil.
- In a food processor, combine all ingredients except for the chocolate chips. Blend until a smooth dough forms.
- Transfer the dough to a bowl and fold in the chocolate chips.
- Pour the dough into the greased pan, spreading it evenly.
- Sprinkle additional flaky salt on top if desired.
- Bake for 25-30 minutes, or until the top is golden brown.
- Let cool before slicing and serving.
